An obviously non-professional photo - taken at the height of the action, when the power failed just as I was about to preheat the oven in order to cook 80 thighs (the other dish was off to the left). |

The marinade ingredients can be blended with whatever implement you have
- a blender, food processor or hand blender. Probably even two rocks would do it. I usually make the marinade the
day before, and put the chicken in the marinade first thing in the morning on
the day that I am cooking.
Preheat the oven to 375o. pour off the marinade, and partially cook the chicken for about half an hour. Meanwhile, cook up the
remaining marinade, and reduce slightly.
Finish cooking the chicken on the
barbeque to caramelize the exterior, periodically basting it with the reduced
marinade. Check the meat next to the bone to be sure that it is done.
Enjoy.
